Pasta and Cheese Bake with Spinach

Not only is this a delicious recipe that you can make in under an hour, but as well it is healthy and great for the kids. You will need 8 ounces pasta, 8 to 10 ounces fresh baby spinach leaves, 3 tablespoons butter, 3 tablespoons flour, 1 ½ cups low fat milk, ¼ teaspoon dried leaf basil, and ½ teaspoon salt to taste.

You will also need 2 cups shredded mozzarella cheese, 1 cup soft bread crumbs, and 2 tablespoons melted butter.

This dish is so easy to prepare, and all you need to do is preheat the oven, lightly grease an 8-inch square baking dish with cooking spray, and then cook the pasta as normal. Next you want to heat the butter in a large saucepan over medium-low heat, stir in the flour until smooth and bubbly, and then add the milk and continue cooking.

You want to cook until the sauce has thickened, and then you add the basil and salt and pepper for taste. Stir in the spinach leaves, stir in hot drained pasta, stir in mozzarella cheese until well blended, and then spoon the pasta mixture into the baking dish that you have prepared.

Now you just toss the bread crumbs in a separate bowl with the melted butter, sprinkle over the pasta mixture, and bake for about a half hour or until you see the top lightly browned.
